Favorite Cheese

Hi! I'm curious now to see what your favorite kind of cheese is. From sweeter to sharper cheeses, each cheese can be unique. You can obviously have more than one. Also if you'd like, what do you use your favorite cheese with? I love cheddar and parmesan cheeses. I use cheddar mostly for grilled cheeses, and sometimes mix with rice. Parmesan I mostly use with pasta ontop. Curious to see what everyone else likes
