In terms of easiness, I'd personally say Acro, Excavation & Swords/Axes - but, mining is pretty relaxing ... as an Olympus main, anyway!

id say do the one thats the lowest.
(not meaning the lowest itself, but the lowest in terms of time per level, cuz you can do diffrend things to level skills that give diffrend amounts of level xp)
