You are able to do that sort of, you can set plot flags that allow players to use/do things on your plot without being added or trusted. im not sure what the different commands are. but they are there

You can tame ocelots in the spawn, they have to be baby ocelots, and take a bit to tame them.

Servers usually do things like Seasons, meaning they reset every couple of months. Donor ranks will stay, and im sure the staff will compensate us for the items we have bought.
