As for the build, Minecraft-themed maps tend to be frowned upon as they are generic and there are already a lot. I’d check the Parkour list, which I’ll link below, to make sure your theme is original; I do know there is already a cow-themed map called CrazyCow (hard difficulty I believe). Good luck!

Sorry to say but we're going to go ahead and reject this map!
The theme and concept isn't original due to it being a cow map, we already have a few of these!
The parkour is repetitive and really easy!
The build could be a lot more attractive but you can always work on that by learning from online tutorials on how to strengthing your building! a tip, Don't make the parkour floating, it more often than not makes the parkour unattractive!
I Can't comment on the difficulty as I'm not sure what one it was submitted as, as you didn't say! but this would fit the difficulty of an easy map very well!
