I have a quest to make 500 cakes! But chickens aren't dropping eggs. Its driving me insane. I have 5 eggs sooo they do drop them? What is happening? lol

Chickens do drop eggs! But at an insanely low chance rate however...
You could afk a stack of chicken spawners for a couple of days and see how many you could get, but because of the way mobs stack + despawn this season, the process of getting eggs is extremely slow

They are insanely slow. My reccomendation is just buying them from somebody thru trading or the auction house.
